Responsibilities

  • Shape Burekas consistently by filling, using shape to tell fillings apart.
  • Finish with egg wash and toppings such as sesame or nigella seed.
  • Freeze, label, date, and store product so it holds quality through the week.
  • Write and maintain clear bake-off specs so the line can bake Burekas correctly on service days.
  • Plan each production day around the weekly par set with the Executive Chef.
  • Track yield, waste, and inventory of flour, butter, and filling ingredients.
  • Keep dough and product at proper temperatures throughout production.
  • Maintain sanitation, labeling, dating, and FIFO rotation in line with NYC DOHMH standards.
  • Help develop new fillings and seasonal Burekas with the Executive Chef.
  • Perform other duties as assigned by the Executive Chef or Chef de Cuisine.

Requirements

  • Must be 18 or older.
  • Minimum 7 years in a professional pastry or bakery kitchen.
  • Hands-on experience making laminated dough.
  • Burekas, puff pastry, or croissant experience strongly preferred.
  • Able to laminate by hand or with a dough sheeter.
  • Able to hold shape, size, and layer quality at volume.
  • NYC DOHMH Food Protection Certificate preferred, or willingness to obtain one within 60 days of hire.
