Responsibilities

  • Lead by example on the floor, creating a fun, relaxed atmosphere and welcoming guests.
  • Manage day-to-day floor operations, including the Lobby, and support breakfast, meetings, and events.
  • Ensure a welcoming and lived-in feel throughout the day, from breakfast to late-night drinks.
  • Anticipate guest needs and guide the team in providing warm, knowledgeable service.
  • Oversee the flow of service, including section allocation, food running, reservations, and communication between floor, bar, and kitchen.
  • Maintain consistent service standards, ensuring prompt drinks, accurate orders, and ready tables.
  • Conduct daily briefings covering bookings, events, menu updates, dietary needs, and sales priorities.
  • Coach and develop the service team, assisting new starters and providing feedback.
  • Collaborate with the Head Bartender, baristas, and Culinary Head Chef to ensure smooth food and drink service and enhance product knowledge.
  • Possess in-depth menu knowledge and make natural, guest-appropriate recommendations.
  • Address and resolve guest issues, taking ownership, finding solutions, and documenting feedback.
  • Manage opening, closing, cleanliness, and side duties, including room presentation and maintenance issues.
  • Integrate food safety, allergen communication, responsible alcohol service, and health and safety into daily operations.
  • Support local collaborations and events, contributing ideas to attract guests and locals.
  • Ensure food safety, allergen communication, responsible alcohol service, and health and safety are part of everyday service.

Requirements

  • Experience as a Floor Manager, Restaurant Supervisor, or Assistant Restaurant Manager in a busy restaurant, hotel bar, or lifestyle hotel.
  • Confidence to lead a shift.
  • Ability to balance a relaxed atmosphere with attentive, well-organised service.
  • Hands-on leadership skills, including running briefings, coaching colleagues, and uniting a team during busy periods.
  • Good understanding of food, wine, cocktails, and coffee, with a curiosity for continuous learning.
  • Proficiency with POS systems, cash controls, stock counts, and daily reporting.
  • Practical understanding of sales and labour costs.
  • Clear communication skills for interacting with guests, neighbours, and an international team.
  • Sound judgment in handling guest complaints and team challenges, remaining calm and knowing when to seek support.
  • Understanding of food safety, allergens, responsible alcohol service, and safe working practices.
  • Flexibility to work early and late shifts, weekends, and public holidays.
  • Willingness to support the wider F&B operation as needed.
