About the Role
As Assistant Kitchen Manager (Assistant Chef de Cuisine), you’ll partner closely with the Chef de Cuisine to run daily operations and own execution shift by shift, focusing on recipe adherence, portion control, food safety, and timely service. This is a hands-on leadership role designed for growth, where you will coach team members, lead the kitchen in the Chef de Cuisine's absence, and develop skills to become a future Chef de Cuisine.
Responsibilities
- Lead assigned shifts as the senior culinary leader, directing stations, setting pace, and managing team response to volume shifts.
- Enforce recipe adherence, portion control, and plating specifications, making real-time corrections.
- Train Shift Leads, Utility Chefs, and Line Chefs on station standards, prep procedures, and new menu items with immediate feedback.
- Build and adjust daily prep and production lists based on forecasted volume to maintain quality and minimize waste.
- Oversee food safety by completing and verifying temperature checks, cooling reports, and digital logs; conduct sanitation walks and enforce allergen-handling and HACCP protocols.
- Manage inventory and ordering by running counts, receiving deliveries, verifying against invoices, flagging variances, and placing orders as directed.
- Monitor food and labor costs through portioning, yield, and waste controls, identifying cost drivers.
- Lead opening line checks and closing procedures, ensuring checklists are complete, equipment is properly shut down, and the facility is secured.
- Take day-to-day leadership of the kitchen in the absence of the Chef de Cuisine.
Requirements
- Minimum of 2 years in a supporting kitchen leadership role (e.g., Assistant Kitchen Manager, Kitchen Lead, Sous Chef) within a high-volume or made-to-order kitchen.
- Proven ability to manage a station and direct a team through a full-volume shift.
- Experience training or onboarding hourly kitchen staff.
- ServSafe Food Handler certification or ability to obtain one.
- Working knowledge of food safety standards, HACCP, and Health Department compliance.
- Familiarity with clean eating principles, dietary restrictions, and allergen-friendly cooking techniques.
- Proficiency with kitchen systems including POS, inventory platforms, online ordering, and digital food safety logs.
- Strong organizational skills to prioritize prep, production, and cleaning in a fast-paced environment.
- Clear communication skills with leadership, kitchen team, and vendors.
- Commitment to sustainability, ingredient integrity, and high kitchen cleanliness standards.
- Background in health-forward, clean-ingredient, made-to-order kitchen concepts and/or experience with delivery-first or digital food concepts is preferred.
