About the Role
The Dishwasher is a core member of the Kitchen team, responsible for maintaining the cleanliness, sanitation, and organization of all kitchenware, glassware, service equipment, and back of house spaces. This role is essential for supporting the operation of two active kitchens, multiple bars, and event spaces, ensuring a smooth and efficient service.
Responsibilities
- Wash and sanitize all dishes, glassware, utensils, cookware, smallwares, and equipment according to standards and regulations.
- Operate, clean, and maintain the dish machine and glass washer.
- Monitor and log wash and rinse temperatures and sanitizer concentration.
- Handle, dilute, and store cleaning chemicals safely.
- Maintain a clean, drained, and organized dish area throughout the shift.
- Wash all beer glassware to a beer-clean standard, ensuring proper separation from kitchenware.
- Air-dry glassware inverted on appropriate surfaces; do not towel-dry.
- Identify and remove defective glassware and notify management.
- Support kitchen teams by ensuring clean pans, tools, and equipment are available.
- Assist with receiving, breaking down, and organizing deliveries, including stock rotation.
- Sweep, mop, and maintain general back of house cleanliness, including walk-ins and storage areas.
- Complete deep-cleaning projects as assigned.
- Report equipment issues, maintenance needs, and supply shortages.
- Move bus tubs, racks, and equipment between various kitchen and service areas.
- Support the prep kitchen with dish and steward coverage.
- Break down and remove trash, recycling, and organics according to schedule.
- Support event turnovers by clearing and resetting service equipment.
- Maintain clean and clear egress paths, floor drains, and mats.
- Restore work areas, equipment, and storage to a clean and organized condition.
- Support the prep team with basic tasks during slower periods.
- Complete opening or closing dish checklists.
- Store all clean dishes, glassware, and equipment in assigned locations.
- Follow end-of-night shutdown procedures for dish and glass washing systems.
- Communicate with kitchen and bar teams to prioritize dish flow and glassware needs.
- Support teammates with initiative and ownership.
- Contribute to a respectful, collaborative, and safe kitchen culture.
Requirements
- 1 year of dishwashing or Back of House experience in a restaurant, bar, or high-volume venue preferred.
- Ability to work at a steady pace through long, high-volume services and ticketed events.
- Strong attention to cleanliness, sanitation, and detail.
- Ability to follow chemical and equipment safety guidelines.
- Reliability and punctuality, including nights, weekends, and holidays.
- Ability to communicate effectively with BOH and bar teams.
- Must be at least 18 years of age.
