About the Role

The Granite Club is seeking a full-time Restaurant Chef to oversee the Club’s Culinary program, including a Sports Pub, Multi-cuisine Family Dining, and a Steakhouse Upscale Dining space. This role involves maintaining excellence in food quality, safety, and hygiene, while evolving the culinary program in line with current trends, in partnership with the Executive Chef and Director of Food & Beverage. The position also includes supervising kitchen employees and liaising with the Stewarding team.

Responsibilities

  • Coordinate kitchen operations for all Food & Beverage Outlets and Banquet functions.
  • Manage ordering, stock rotation, and waste minimization to achieve maximum yields.
  • Ensure all daily kitchen ordering is completed and submitted to the purchasing department.
  • Maintain secure storage and correct conditions for all stocks.
  • Ensure timely preparation of mise-en-place for all cook’s sections.
  • Verify correct garnishing, seasoning, portion size, and service plate for all dishes.
  • Ensure all dishes are prepared to correct specifications, quantity, and quality.
  • Assist and supervise Banquets, Pastry, Stewarding, Purchasing, and Employee Dining operations.
  • Maintain food cost at or below budgeted percentage and manage operational purchases within budget.
  • Ensure food cost alignment using and building a cost database for each outlet and event.
  • Stay current with F&B trends, culinary techniques, and products through industry engagement.
  • Develop and implement a training plan to enhance team knowledge and skills.
  • Lead new menu administration, including specifications, food costing, and communication tools.
  • Deputize for the Executive Chef and Exec. Sous Chef in their absence, liaising with the Director of Food & Beverage.
  • Promote team spirit and lead by example.
  • Provide guidance, set performance standards, monitor performance, and train junior cooks.
  • Communicate anticipated shortages promptly to Culinary and Front of House teams.
  • Spearhead menu development, contributing new dishes and delegating development to Sous chefs and cooks.
  • Maintain conceptual integrity across restaurant menus for a cohesive culinary experience.
  • Complete handovers at the beginning and end of each shift.
  • Lead kitchen and attend restaurant front of house briefings.
  • Assist Outlets Managers with food knowledge training for the front of house team.
  • Participate in the onboarding process for new front of house team members.
  • Review and correct weekly schedules to ensure efficiency and align with business levels and labor costs.
  • Work with the Executive Chef and Food and Beverage Director on special projects and recipe development.
  • Maintain presentable appearance and knowledge when working in Member areas.
  • Respond to Member inquiries and requests in a timely fashion (within 24 hours).
  • Promote an open and collaborative team environment through clear communication and an open-door policy.
  • Hold daily briefings with Sous Chefs, Chef de Parties, and Demi Chef de Parties.
  • Coordinate with the Executive Chef and hold daily team meetings with the culinary team.
  • Demonstrate, train, and communicate Granite Gold Hospitality and Granite Club Employee Competencies.
  • Utilize knowledge of seasonal ingredients for menu changes and promotions.
  • Handle conflict situations with diplomacy, tact, confidence, and professionalism.
  • Adhere to all Granite Club policies, emergency procedures, and HR policies.
  • Conduct constructive annual performance reviews for Kitchen employees.
  • Take advantage of training opportunities.
  • Develop training and succession plans for departmental consistency.

Requirements

  • A minimum of 10 years' experience required.
  • A minimum of 5 years' experience as a Sous Chef in a comparable Food & Beverage operation.
  • Canadian Red Seal or Overseas equivalent required, or in process.
  • Diverse culinary experience or specialization in Steakhouse/Italian cuisine is an asset.
  • Food Handling Certification required.
  • Must be able to read, write, and speak English.
  • Must be knowledgeable in food cost and labor cost control.
  • Strong interpersonal and organizational skills required.
  • Ability to coach, train, counsel, and encourage employees.
  • Ability to exercise progressive discipline for growth and improvement.
  • Computer knowledge required.
  • Ability to cope with extreme pressure in a fast-paced environment.
  • Ability to perform strenuous physical labor.
  • Flexible to work variable shifts, including evenings, weekends, and holidays.
  • Must perform a criminal background check and a vulnerable sector search.
