About the Role

Join the pre-opening culinary team of Delano London as a Pastry Chef de Partie. You will be responsible for your pastry section, delivering refined, consistent, and beautifully presented desserts, pastries, and baked items. This role involves leading by example, supporting the pastry team's development, and creating memorable experiences across the hotel's dining outlets and events.

Responsibilities

  • Take ownership of your assigned pastry section, ensuring all preparations and service meet Delano London standards.
  • Produce pastries, desserts, baked goods, creams, custards, doughs, chocolates, and other pastry preparations according to recipes and specifications.
  • Support the Pastry Sous Chef and senior kitchen team with daily production, service, events, afternoon tea, room service, and other hotel requirements.
  • Maintain high standards of presentation, precision, consistency, and portion control for all pastry items.
  • Organize mise en place efficiently, prioritizing tasks according to service needs and communicating clearly with the pastry team.
  • Guide and support Demi Chefs de Partie, Commis Chefs, and trainees within your section.
  • Follow all food safety, allergen, hygiene, storage, labelling, and temperature-control procedures.
  • Monitor stock levels, minimize waste, and use ingredients responsibly while maintaining quality and creativity.
  • Contribute to pre-opening preparation, recipe testing, tastings, training, equipment checks, and the establishment of pastry standards.
  • Work collaboratively with the wider kitchen and front-of-house teams to deliver a seamless guest experience.

Requirements

  • Previous experience as a Pastry Chef de Partie or in a similar pastry role within a quality hotel, restaurant, or bakery.
  • Strong technical pastry skills and a genuine passion for desserts, baking, presentation, and high-quality ingredients.
  • Some knowledge of Mediterranean and Portuguese desserts is a significant advantage.
  • Organized, reliable, and able to work calmly and efficiently in a fast-paced, high-volume operation.
  • Good understanding of food safety, allergens, hygiene, and professional kitchen standards.
  • Pride in consistency, attention to detail, and the delivery of beautifully finished products.
  • Supportive team player who enjoys coaching junior colleagues and contributing to a positive kitchen culture.
  • Flexible to work early mornings, evenings, weekends, and holidays as per business needs.
