About the Role

This role involves preparing food and serving customers in accordance with local standards, guidelines, and regulations, including all prep and assistance required for all stations. This is a 32-hour per week position, Monday to Thursday.

Responsibilities

  • Obtain daily production schedule and preparation requirements from the Chef
  • Label and stock all ingredients on shelves for organization and accessibility
  • Measure ingredients and seasonings for cooking
  • Prepare cooking ingredients by washing and chopping vegetables, and cutting meat
  • Undertake basic cooking duties such as reducing sauces and parboiling food
  • Prepare simple dishes such as salads and entrees
  • Maintain a clean and orderly kitchen by washing dishes, sanitizing surfaces, and taking out trash
  • Ensure all food and other items are stored properly
  • Comply with nutrition and sanitation guidelines
  • Perform other kitchen duties as assigned
  • Represent Compass Group Canada in a courteous, efficient, and friendly manner
  • Handle tasks in other areas of the kitchen in addition to assigned stations
  • Adhere to menu specifications and standardized recipes, assembling ingredients for required quantities
  • Change and filter oil at the Grill station weekly
  • Responsible for opening and closing checklists and necessary reports
  • Prepare food items such as meats, vegetables, and cheeses using multiple pieces of equipment
  • Portion quantities for bulk service and plate food for customers, employees, and visitors
  • Assist with special functions and catering as required
  • Use batch cooking techniques and follow recipes
  • Maintain established food rotation protocols to minimize spoilage and waste
  • Ensure safe and sanitary practices are followed in accordance with company and facility policies
  • Perform cleaning duties and responsible for the cleaning of own station
  • Ensure all food served exceeds standards for quality control, at the proper temperature and time
  • Maintain all related work areas and equipment in a clean and sanitary condition
  • Maintain all HSQA records, such as production logs, hot and cold temp logs, cooling logs, receiving logs, and cleaning logs
  • Follow principles of sanitation and safety in handling food and equipment
  • Report damaged and/or inoperable equipment and fixtures to designated personnel
  • Follow Manager/Chef's direction as required

Requirements

  • Previous experience as a prep cook required
  • Knowledge of health and safety rules in a kitchen
  • Able to operate cutting tools and kitchen utensils
  • Physical ability to carry out the duties of the position
