About the Role
Individual will use appropriate sanitation and safety procedures to clean tableware, pots, pans, and utensils. Maintain cleanliness throughout the dishroom and kitchen, and assist with setup and breakdown of food functions and coffee breaks.
Responsibilities
- Know weekly work schedule and be in full uniform.
- Properly use dish machine to clean all dishes.
- Wash dirty pots and pans in potsink and potwasher.
- Organize storage of dishes, glasses, silverware, pots, pans, and utensils.
- Keep dish machine and potwasher filled with clean water and monitor chemical usage.
- Maintain appropriate dish machine temperatures, e.g., final rinse at 180 degrees.
- Keep soiled dish area organized and clean.
- Keep the area behind the dish machine clean and organized.
- Wipe down and sanitize all metal surfaces in dishroom/potroom.
- Sweep and mop floors.
- Remove trash to the dumpster when full and follow recycling procedures.
- Reline trash cans with clean bags.
- Maintain a clean and organized mop closet.
- Assist with kitchen plate-up, food service set-up, and breakdown.
- Follow proper breakdown procedures for dishroom and pot room daily.
- Maintain the sanitation of utility areas and equipment.
- Prepare all hot/cold beverages as indicated by production lists.
- Deliver beverages to food service area and clean urns and cambros.
- Maintain sanitation of hand towel dispenser, soap dispensers, hand wash sinks, and dish machine/pot washer.
- Set-up and removal of food service equipment and tables for services and breakdown.
- Report all breakage to management.
- Perform additional duties as directed by Management.
Requirements
- Obtain work schedule on a weekly basis.
- Maintain proper uniform when working in public space.
- Work late nights and then back again early morning.
- Punch in for shift on time and be prepared in a properly cleaned and pressed uniform.
- Punch in and out at scheduled time, including breaks and lunchtime.
- No excessive jewelry.
- Call supervisor at least two hours prior to scheduled shift if sick and provide Doctor's notification.
- Stand throughout the entire shift.
- Reach, bend, stoop, wipe, lift, carry, climb, balance, kneel, crouch, walk, push, pull, and grasp.
- Exert up to 100 pounds of force occasionally and/or up to 20 pounds of force frequently.
- Carry items up flights of stairs and service corridor ramps.
