About the Role

At Soho House, a Sushi Chef will consistently produce authentic, creative, and high-quality dishes while maintaining food safety standards and contributing positively to the kitchen team. This role involves innovating and refining sushi offerings for the Club’s diverse clientele.

Responsibilities

  • Preparation, crafting, and presentation of high-quality sushi dishes, sashimi, and Japanese-inspired small plates.
  • Maintain quality control in terms of portion sizes, presentation, taste, and texture.
  • Uphold excellent hygiene and food safety standards in line with HACCP and club policies, with particular care for allergens and dietary requests.
  • Be flexible in assisting other areas of the kitchen when required.
  • Monitor quality and freshness of fish and seafood; report issues with inventory or quality to management.
  • Support the Head Chef and Sous Chef in menu development, portion control, and food costing.
  • Prepare sushi dishes including nigiri, maki, sashimi, and hand rolls to specification.
  • Ensure daily setup of sushi station and mise en place, including fish filleting, rice preparation, and garnish prep.
  • Engage with team and FOH staff to explain menu items and help deliver a premium guest experience.
  • Maintain appropriate stock levels of sushi-grade fish and essential ingredients.

Requirements

  • Precise knife skills, a refined palate, and a strong understanding of traditional and modern sushi techniques.
  • Up to 2 years’ experience in a busy high-profile venue with a natural flair for first-class service.
  • Reliable, friendly, and happy to be a key part of the team that strives for success.
  • Minimum 3–5 years of experience in Japanese cuisine in a high-profile restaurant or private club setting.
  • Proven ability to lead a kitchen section and mentor junior staff.
  • Sushi dishes consistently meet visual and flavour standards; high guest satisfaction.
  • Must be able to demonstrate competency as outlined in the training schedule and Club School.
  • Must be able to work flexible shifts and schedules, including weekends and holidays as needed.
  • Ability to take direction, work in a team environment and autonomously.
