About the Role
The Beverage Operations Manager is responsible for the daily leadership, operational performance, and financial success of assigned beverage operations, including casino bars, lounges, service bars, entertainment venues, VIP lounges, specialty beverage outlets, and special event beverage programs. This position ensures exceptional guest experiences, operational efficiency, regulatory compliance, and achievement of financial objectives while leading a diverse team in a fast-paced hospitality environment.
Responsibilities
- Oversee the daily operations of assigned bars, lounges, service bars, beverage carts, entertainment venues, VIP areas, cocktail servers, bartenders and specialty beverage outlets.
- Ensure consistent execution of company service standards, beverage procedures, and brand expectations.
- Monitor operational performance and guest demand to maximize efficiency, revenue, and guest satisfaction.
- Conduct regular inspections to ensure cleanliness, organization, maintenance, and operational readiness.
- Ensure beverage venues are properly staffed and equipped to support business demands.
- Support new beverage programs, cocktail menus, promotions, and seasonal initiatives.
- Promote a guest-first culture throughout all beverage operations.
- Ensure team members provide friendly, efficient, and professional service.
- Monitor guest feedback and implement service recovery solutions when needed.
- Respond to guest concerns promptly and professionally.
- Support VIP service initiatives and high-profile guest experiences.
- Drive programs that improve beverage quality, speed of service, and guest satisfaction.
- Support achievement of revenue, labor, beverage cost, and profitability goals.
- Monitor and manage labor utilization to ensure productivity and budget compliance.
- Analyze operational reports and key performance indicators to identify opportunities for improvement.
- Manage beverage costs through inventory controls, portion controls, recipe compliance, and waste reduction.
- Assist in developing annual budgets, forecasts, and operating plans.
- Monitor sales trends and support initiatives that drive beverage revenue growth.
- Ensure compliance with established beverage cost and inventory standards.
- Maintain beverage quality standards across all assigned venues.
- Support beverage menu development, cocktail programs, wine offerings, beer selections, and promotional initiatives.
- Ensure compliance with company pouring standards and responsible alcohol service requirements.
- Partner with suppliers and procurement teams regarding beverage products and operational needs.
- Support beverage training programs and product knowledge initiatives.
- Monitor inventory levels and ensure product availability throughout all beverage outlets.
- Recruit, train, coach, and develop supervisors, bartenders, lounge servers, beverage attendants, and support staff.
- Establish performance expectations and provide ongoing coaching and feedback.
- Conduct performance evaluations and disciplinary actions when necessary.
- Support succession planning and internal development programs.
- Foster a positive, inclusive, and accountable work environment.
- Promote teamwork and collaboration across all Food & Beverage operations.
- Ensure compliance with all federal, state, and local alcohol service regulations.
- Maintain strict adherence to responsible beverage service requirements.

- Conduct operational audits and compliance reviews.
- Support incident investigations and corrective action plans when necessary.
- Maintain compliance with company policies and procedures.
- Provide operational leadership and support across all Food & Beverage venues as business needs require, including restaurants, food courts, marketplaces, cafés, banquet operations, catering functions, special events, and entertainment venues.
- Assist with the management and execution of banquet, catering, VIP, and casino-hosted events to ensure exceptional guest experiences and operational success.
- Collaborate with Culinary, Stewarding, Warehouse, Procurement, and Facilities teams to ensure seamless operational execution across all outlets.
- Assist with staffing, scheduling, labor deployment, and operational coverage throughout the Food & Beverage division during peak periods, special events, and staffing shortages.
- Support property-wide promotions, marketing initiatives, seasonal events, and revenue-generating programs.
- Assist with opening new venues, menu launches, concept rollouts, and operational improvement initiatives.
- Participate in cross-functional projects involving Finance, Human Resources, Facilities, Security, Marketing, Information Technology, and Casino Operations.
- Serve as Manager-on-Duty for Food & Beverage operations as assigned.
- Support emergency response efforts, operational recovery plans, and business continuity initiatives when necessary.
- Participate in leadership meetings, operational reviews, and strategic planning sessions.
- Perform other duties as assigned to support the overall success of the Food & Beverage Division.
- Support compliance with collective bargaining agreements and company policies.
- Partner with Human Resources and Labor Relations regarding employee relations matters.
- Assist with investigations, coaching, corrective actions, and grievance processes as appropriate.
- Promote positive working relationships between management, team members, and union representatives.
- Ensure consistent application of policies, procedures, and labor agreements.
Requirements
- High School Diploma or GED required.
- Minimum three (3) years of Food & Beverage or Beverage management experience in a casino, hotel, resort, stadium, entertainment venue, or high-volume hospitality environment.
- Experience managing bars, lounges, service bars, or multi-unit beverage operations preferred.
- Strong knowledge of beverage operations, alcohol service regulations, inventory controls, and beverage cost management.
- Experience with labor management, scheduling, inventory control, and financial accountability.
- Strong leadership, communication, and organizational skills.
- Experience working in a unionized environment preferred.
- Proficiency with Microsoft Office, POS systems, inventory management systems, and labor management software.
- Must be able to obtain and maintain all required gaming licenses, alcohol service certifications, and regulatory permits as required by New York State.
- Ability to stand and walk for extended periods during scheduled shifts.
- Ability to inspect operational areas throughout the property.
- Moderate physical ability such as lift or maneuver at least Twenty-Five (25) pounds.
- Ability to read, analyze, and interpret documents, such as policy and procedure manuals and other related documents.
- Ability to respond to common inquiries from other Team Members or guests.
- Fluency in English required.
- Ability to write detailed instructions and correspondence.
- Ability to effectively present information in one-on-one and small group situations.
- Ability to work in a fast-paced environment while maintaining accuracy and attention to detail.
- Ability to compute complex mathematical calculations.
- Ability to work with mathematical concepts such as probability and statistical inference.
- Ability to apply concepts such as fractions, percentages, ratios, and proportions to practical situations.
