About the Role
As a Demi Chef at Hotel Indigo Melbourne on Flinders, you will play a key role in delivering an exceptional dining experience for every guest. You will support the kitchen operation through food preparation and presentation, and cleaning and maintaining kitchen equipment and the premises, ensuring compliance with all regulations and standards.
Responsibilities
- Assist the kitchen team in developing creative and appealing menu items.
- Provide suggestions for recipes, techniques, and dish functionality.
- Ensure all food produced meets or exceeds minimum set standards and standard recipes.
- Continuously seek to expand knowledge and techniques.
- Manage portion control, wastage, and adhere to par levels.
- Minimize energy and maintenance costs in the kitchen.
- Seek clarity on expectations, methods, and performance evaluation from the Sous Chef.
- Assist senior chefs in leading the team and ensuring organizational standards, quality control, and compliance.
- Work collaboratively to complete tasks in order of priority and within allotted timeframes.
- Ensure a safe and pleasant work environment for all staff.
- Treat colleagues with professional respect and courtesy.
- Monitor and control stock levels, communicating purchasing requirements daily.
- Monitor deliveries for quality and quantity.
- Assist senior chefs with checking and receiving goods.
- Assist the kitchen team in sourcing produce based on price, quality, and appeal.
- Display high flexibility in acceding to “off-the-menu” guest requests.
- Respond to guest needs and resolve related problems promptly.
- Ensure guests receive prompt attention and personal recognition.
- Build and maintain positive relationships with internal customers and guests.
- Maintain a high standard of personal appearance and hygiene.
- Follow the Food Safety and HACCP program.
- Ensure appropriate storage and rotation of all stock.
- Maintain kitchen cleanliness and readiness for public presentation.
- Adhere to the kitchen cleaning schedule.
- Maintain organization, cleanliness, and security of all goods storage areas.
- Ensure training in all dangerous kitchen areas.
- Understand fire procedures clearly.
- Maintain a clean and safe environment at all times.
- Advocate for safe work practices and monitor kitchen safety.
- Demonstrate effort to recycle and reduce waste.
- Look for ways to reduce consumption and environmental impact.
- Champion inclusivity, diversity, and equal opportunity.

- Attend all briefings, staff meetings, and training sessions.

Requirements
- Professional and personable with a "role up the sleeves", can do attitude.
- Ability to communicate effectively with colleagues, guests, and external parties in spoken and written form.
- Strong team working skills.
- A passion for delivering superior results.
- Flexible availability, including nights, weekends, and public holidays.
- Ability to lift, push, and pull objects up to 50lbs (23 kg), involving bending and kneeling.
- Meet the appropriate legal requirements to work in Australia.
- Previous experience as a cook and/or trade certificate in Commercial Cookery.
- Must have the physical requirements to frequently walk, stand for long periods, repetitively bend, squat, kneel, stoop, lift, carry, push, pull, perform repetitive hand/arm movements, grasp firmly, carry hot objects, utilize large equipment, and perform repetitive motions.
