About the Role
St George Private Hospital is seeking a Sous Chef to provide operational leadership within its high-volume catering department, ensuring the consistent delivery of nutritious, high-quality meals for patients, staff, and visitors. This role is pivotal in balancing clinical dietary requirements with exceptional culinary execution to enhance the overall patient experience.
Responsibilities
- Prepare nutritious and appetising meals for patients, staff, doctors, the café, and hospital functions.
- Uphold food quality, hygiene, and safety standards in line with regulatory requirements.
- Support daily kitchen operations including ordering, stock rotation, and food safety compliance.
- Work collaboratively in a busy team environment, reporting to the Catering Manager.
Requirements
- A minimum of 5 years' experience in a similar role.
- Possess proven experience in supervising kitchen teams, managing rosters, and fostering a collaborative culture to ensure consistent service standards.
- A strong understanding of specialised clinical diets, including texture-modified meals, allergen management, and nutritional requirements for patient recovery.
- Expertise in HACCP principles and food safety legislation, with a commitment to maintaining impeccable hygiene standards and detailed documentation.
- Ability to thrive in fast-paced environments, manage competing priorities, optimize food costs, and adapt to the unique logistical demands of a 24/7 hospital facility.
- Adaptable to a flexible roster, including working weekends.
- Must provide or complete a National Police Check conducted within the previous 12 months.
- Ramsay may require a Working-With-Children Check and proof of immunisation against infectious diseases.
