About the Role
Big Mamma is a French Italian restaurant group founded by Victor Lugger and Tigrane Seydoux. Over the past 10 years, we have opened 36 restaurants across France, Monaco, England, Spain, Germany, Belgium, and Italy. Our mission is to share the special atmosphere of the most beautiful Italian traditions, creating unique moments of sharing with our customers.
Responsibilities
- Stock management, inventory, and understanding of Food Cost
- Basic knowledge of the group's artistic direction
- Quality control and guarantee of mise en place, knowledge of hygiene and safety
- Management of the pass and service
- Knowledge of basic cooking principles and techniques, recipe reproduction, and fresh pasta knowledge
- Training junior staff, onboarding, and team motivation
