About the Role
Under the general guidance of the outlets General Manager & Assistant General Manager of the Booking Office 1869, the Restaurant Manager will assist in coordinating and directing all aspects of the Booking Office, Terrace and Mi&ME operations. This includes managing all meal periods, event operations, beverage offerings, food offerings, and restaurant/bar reservations.
Responsibilities
- Coordinate and direct all aspects of the Booking Office, Terrace and Mi&ME operations.
- Manage all meal periods, event operations, and beverage and food offerings.
- Actively participate in restaurant and bar reservations.
- Manage the floor, bar, and all staff of Booking Office services (Breakfast, Lunch, Dinner).
- Oversee recruitment, P&L, scheduling, cost control, forecasting, and people development.
- Implement a sales-oriented approach and conduct performance reviews.
- Manage and undertake operations roles as required by the business.
- Achieve bar revenue, cost, and profitability targets.
- Ensure guest satisfaction and implement service recovery.
- Maintain beverage cost percentage in line with budget.
- Meet mystery shopper and brand audit performance standards.
- Foster team engagement and retention.
- Contribute to sales initiatives and promotional activities.
- Promote creativity and innovation through regular product development meetings.
- Conduct monthly department meetings and 1-2-1s.
- Ensure team members have essential product knowledge (food and beverage), menu, operational, food hygiene, and service knowledge.
- Be fluent in banqueting operations service and banquet room setup and technology applications.
- Understand overall hotel operations and their role in the wider guest experience.
- Proactively learn new F&B trends, skills, and beverage items.
- Bring ideas to the table to drive creativity in venues.
- Deliver exceptional guest experiences in line with 5-star luxury hotel standards.
- Ensure all guests receive personalized, attentive, and professional service.
- Handle guest feedback, complaints, and special requests promptly and effectively.
- Build strong relationships with regular and VIP guests.
- Monitor guest satisfaction scores and implement improvement plans.
- Manage day-to-day restaurant operations, ensuring smooth service periods.
- Maintain exceptional standards of cleanliness, hygiene, presentation, and ambience.
- Ensure compliance with all hotel brand standards and operating procedures.
- Coordinate effectively with Kitchen, Stewarding, Events, Front Office, and other departments.
- Oversee reservations, seating arrangements, and capacity management.
Requirements
- High school diploma or GED; 4 years experience in the food and beverage, culinary, or related professional area.
- OR 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or related major; 2 years experience in the food and beverage, culinary, or related professional area.
