About the Role

Lactalis USA is hiring a Dairy Machine Operator for the 3rd shift in Buffalo, NY. This role is responsible for operating and cleaning multiple pieces of equipment, including cheese molders, cooker, DMC, and brine systems, while ensuring food safety and quality.

Responsibilities

• Start-up, maintain sanitation, perform CIP, shutdown, and operate machinery.
• Troubleshoot machinery as needed.
• Monitor key processing indicators such as time, temperature, pH, moisture, and weight.
• Maintain production in a continuous flow operation.
• Complete daily production and sanitation paperwork accurately, noting any non-compliance.
• Ensure Food Safety and Security per GMP and GSP policies.
• Perform other duties as requested by the Mozzarella Production Supervisor.
• Work efficiently and safely to produce a high-quality product.

Requirements

• Basic mathematical skills required (ability to calculate averages).
• Attention to detail and accuracy in work.
• Strong communication abilities, written and verbal.

Education Level

• Associates Degree Dairy Science/chemistry preferred.
• High School Diploma Required.
