About the Role

This role assists the Executive Chef in food preparation and cooking, coordinates food-service associates, and assumes kitchen responsibility in the Executive Chef's absence. The position operates within a food truck environment and may support other dining departments during off-seasons.

Responsibilities

  • Cooks and prepares food following approved recipes and production standards.
  • Ensures all deadlines are met based on production orders.
  • Supervises hourly food service associates, including interviewing, scheduling, payroll, training, counseling, and recommending disciplinary action.
  • Stores food in designated areas following all corporate, state, and federal food safety and sanitation procedures.
  • Ensures proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures.
  • Maintains sanitation of equipment, supplies, and utensils.
  • Cleans workstation thoroughly before leaving the area.
  • Keeps display equipment clean and free of debris during meal service.
  • Interacts with customers to resolve complaints in a friendly, service-oriented manner.
  • Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers.
  • Keeps up with peak production and service hours.
  • Monitors inventory and deliveries of product and supplies.
  • Tracks product production, consumption, and waste.
  • Informs supervisor when supplies or product are low.
  • Performs other duties as assigned.
  • Valid driver's license and ability to drive large vehicles.
  • Basic mechanical knowledge to operate truck components.
  • Ability to work nights, weekends, and flex schedules.
  • Ability to lift 40 or more lbs., stand continually for up to 8 hours, and climb in and out of the truck repeatedly.
  • Ability to coach, develop, and mentor staff.

Requirements

  • Prior culinary and food truck experience is preferred.
  • Culinary education and/or culinary experience include purchasing, inventory, and food production.
  • Experience creating custom menus is preferred but not required.
  • Strong customer service skills.
  • Ability to navigate tech-related tools such as POS, mobile ordering, monitors, purchasing, and menu platforms.
  • Position will work in other dining departments during the times the truck is closed for the season.
  • Qualified candidates must be able to perform the essential functions of this position satisfactorily with or without a reasonable accommodation.
  • May require Florida Level 2 background screening.
  • Consideration for employment includes those with a criminal history (including relevant driving history) in accordance with applicable laws.
