About the Role
Prepare foods according to recipes and production tallies, adhering to food safety and sanitation regulations. Work closely with the Executive Chef to provide nutritionally adequate meals to residents and patients.
Responsibilities
- Possesses knowledge of all Dining Services operations policies and procedures.
- Prepares menu items for Resident meals using production sheets and recipes to maintain optimal nutritional adequacy.
- Plates food including proper portion size and appealing presentation.
- Follows all HACCP guidelines (which include sanitation and food safety).
- Uses cooking equipment properly (stove, steamer, grill, blender, buffalo chopper, floor mixer, soup kettles, brazier, etc).
- Knowledge of basic cooking terms (steam, bake, fry, broil, sauté).
- Must have knowledge of basic cooking measurements (cup, quart, oz, teaspoon, tablespoon etc.).
- Calibrates and uses a food thermometer correctly.
- Takes the temperature of foods and records the temperature on the proper HACCP form.
- Answers the phone and provides resident requests in a timely manner.
- Knowledge of therapeutic diets including restrictions and consistency alterations.
- Washes pots and pans using the 3-sink method as needed.
- Cleans equipment, storage areas and general cleaning in the kitchen.
- Uses chemicals for cleaning properly.
- Knowledge of Material Data Safety Sheets.
Requirements
- Ability to read & speak English and have basic math skills.
- Strong interpersonal skills.
- Ability to work a flexible schedule including Holidays and Weekends.
