About the Role
Manage multiple bar venues at W Sydney, overseeing the hotel's beverage program and supplier management. Drive talent and guest satisfaction, revenue, and profitability.
Responsibilities
- Collaborate with the Beverage & Food leadership team to curate beverage and food programs, and beverage lists based on concepts and market trends.
- Actively participate in the development and execution of the programming calendar for the venues.
- Create a strong beverage program for the hotel, including writing beverage menus for different venues.
- Collaborate with beverage partners to manage beverage offerings and curate vibrant experiences with cocktail partners.
- Implement agreed-upon beverage policy and procedures in synergy with other venues.
- Manage in compliance with all local, state, and federal labor, beverage, and liquor laws.
- Understand beverage control, including days on hand, perpetual inventory, bar pars, portion control, cost control, beverage potentials, sales mix analysis for beverage and food, issue & returns, beverage & food safety standards, inventories, and financial spot checks.
- Attend pre and post-convention meetings as needed to understand group needs.
- Comprehend budgets, operating statements, and payroll progress reports for financial management of the department.
