About the Role
The Sous Chef is responsible for assisting in the overall success of the food program, adhering to client's culture and guidelines, OSHA, Health Department regulations, and Guckenheimer food quality standards. This position oversees daily operational tasks, recipe execution, production sheets, food purchasing, sanitation, and safety, while motivating, training, and directing employees.
Responsibilities
- Oversee daily operational tasks, recipe execution, production sheets, and pars.
- Manage food purchasing, sanitation, and safety.
- Motivate, train, develop, and direct employees to achieve operational objectives.
- Communicate daily with the Executive Chef regarding catering needs and ordering.
- Provide high-quality service in accordance with ISS/Guckenheimer and client standards.
- Utilize food preparation procedures in accordance with federal, state, and local guidelines.
- Assist the Executive Chef with administrative duties, including attendance and human resources.
- Monitor and review HACCP logs.
- Assemble RTE menu items in accordance with recipes and core standards.
- Clean and sanitize work areas and equipment following regulatory rules.
- Support management with monthly inventory.
- Notify management of concerns with product quantities, food/equipment safety, or other situations.
- Attend daily meetings.
- Report all accidents and injuries in a timely manner.
- Communicate with team members regarding needs and support capabilities.
- Support in other functions and/or locations as business demands.
- Perform other duties and responsibilities as assigned.
- Ensure high-quality food items, catering requests, and contracts are creative, well-prepared, and presented cost-effectively.
- Follow Guckenheimer's food standards guidelines.
- Ensure products and ingredients are purchased following Guckenheimer's purchasing standards and sustainability commitments.
- Work with the management team to ensure display, catering, and café service meet account standards.
- Ensure kitchen waste is disposed of properly and sustainably.
- Facilitate weekly team meetings regarding upcoming events.
- Train and supervise staff.
- Maintain proper uniform standards.
- Assist in staff reviews, coaching sessions, and disciplinary actions.
- Ensure all trainings are completed in a timely manner and documented.
- Represent the company in a courteous, efficient, and professional manner.
- Interact with customers and resolve complaints in a friendly and service-oriented manner.
- Communicate with the Client honestly, accurately, and in a timely manner.
- Review weekly participation and make recommendations affecting food budget or service levels.
- Maintain and monitor labor with business forecasts and the budget.
- Ensure food cost meets budgetary goals each week.
- Ensure the café meets standards and oversee its daily appearance and upkeep.
- Supervise the proper presentation of food.
- Adhere to Guckenheimer's standards for fresh and creative décor.
- Edit daily signage for proper spelling, allergens, and descriptions.
Requirements
- Adhere to client’s culture and guidelines, OSHA, the Health Department’s regulations, and Guckenheimer food quality standards.
- Prioritize communication, consistency, quality, presentation, and food safety.
- Ensure kitchen organization and cleanliness provide a safe environment.
- Follow Workplace Safety guidelines, policies, and SOPs daily.
- Follow Food Safety guidelines, policies, and SOPs daily.
- Follow HACCP guidelines, policies, and SOPs daily.
- Follow all internal audit guidelines, policies, and SOPs daily.
- Follow Guckenheimer guidelines, policies, and SOPs daily.
- Come to work properly dressed according to the dress code.
- Work under pressure and time deadlines during peak periods.
- Work in a standing position for long periods of time (up to 8-10 hours).
- Reach, bend, stoop, push and/or pull, and frequently lift up to 25 pounds.
- Utilize team lift, transportation carts, and any other means of assistance when dealing with heavy loads.
- Adhere to Health, Safety, Environment, and Quality (HSEQ) policies and procedures.
- Actively participate in HSEQ training.
- Report any potential hazards or compliance concerns.
