About the Role
The Catering Captain coordinates catering staff schedules to ensure all functions are delivered, served, and cleared in a timely fashion. This role involves preparing and serving food at scheduled functions under the supervision of the Catering Director, with potential responsibilities for driving a delivery vehicle.
Responsibilities
- Determine workload requirements from catering orders
- Meet with function group leaders to discuss setup arrangements and resolve problems
- Interact with customers and resolve complaints in a service-oriented manner
- Instruct staff on work expectations for catered functions
- Assist staff in setting up rooms to desired specifications
- Assemble and deliver food and supplies to scheduled locations
- Serve food and beverages to guests
- Return food, beverages, serving equipment, and utensils to the catering facility
- Ensure proper presentation, portion control, and maintenance of serving temperatures following HACCP standards
- Maintain sanitation and orderliness of all equipment, supplies, and utensils
- Ensure proper food preparation by following approved recipes and production standards
Requirements
- Previous catering supervisory experience
- Valid driver's license may be required
- Must possess or be able to obtain a valid food handler's permit
- Must possess or be able to obtain an alcohol server's permit where required by state law
