About the Role
The Senior Cook should possess expertise in a specialized method or style of cooking, with the ability to demonstrate entertainment value or produce specialty foods. This role assists Sous Chefs in all culinary functions, adhering to Seneca Gaming Corporation’s policies and procedures.
Responsibilities
- Insure food items are properly stored, including raw materials and prepared items.
- Inspect all outgoing orders for proper preparation, portion control, and correct presentation.
- Ensure all items are available for consumption by guests, such as soups and sauces, prior to restaurant opening.
- Assemble supplies and equipment needed for daily cooking.
- Take inventory of all meats and seafood, requiring knowledge of needed food items and quantities.
- Coordinate food orders to the appropriate cooks.
- Prepare all food items with strict adherence to recipe specifications.
- Review production schedules to determine food requirements, including variety and quantity.
- Complete production sheets and other records in conjunction with Sous Chefs.
- Maintain clean work areas, utensils, and equipment.
- Regulate temperatures of ovens, broilers, and grills.
- Maintain proper food temperatures in accordance with regulatory and/or ServSafe standards.
- Properly label, date, and rotate all products to ensure safe keeping and sanitation.
- Demonstrate command of all kitchen stations, including roast, fry, pasta, vegetable, grill, pantry, breakfast, sauté, and high volume quantity cooking.
- Work with Sous and Room Chefs in conjunction with daily operations.
- Teach and mentor Cooks and Production Cooks.
- Work in harmony with others under a strenuous environment.
- Report to work well-groomed in full uniform and on time with badge on the upper left side of the uniform.
- Provide prompt, friendly, and courteous service of food and beverage to all guests.
- Be hospitable, friendly, and polite with all guests, co-workers, and management using positive body language.
- Maintain a current understanding of all policy and guidelines regarding information security, including the Seneca Gaming Corporation Acceptable Use Policy.
- Comply with all information security policies and procedures at all times.
- Provide exceptional customer service to all patrons and communicate in a pleasant, friendly, and professional manner at all times.
- Maintain a professional work environment with supervisors, managers, and staff.
- Meet the attendance guidelines of the job and adhere to regulatory, departmental, and company policies.
- Complete all required SGC Training programs within nine (9) months from commencement of employment.
- Attend all necessary meetings.
Requirements
- Must be 18 years of age or older upon employment.
- High school diploma or equivalent required.
- Three (3) years of advanced cooking skills required.
- Previous customer service required.
- Must possess excellent communication skills, including the ability to read, write, and speak effectively to employees as well as customers.
- Must have the ability to deal effectively and interact well with customers and employees.
- Must have the ability to resolve problems/conflicts in a diplomatic and tactful manner.
- Must be able to stand, walk, and move through all areas of the casino.
- Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced, casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.
- Work involves moderate exposure to hot and cold temperatures and/or loud noises.
- Moderate physical activity is required along with the handling of objects up to fifty (50) pounds.
- Work environment involves some exposure to physical risk, which requires following basic safety precautions.
