About the Role
The Sous Chef is the third in command in the kitchen, responsible for food production and ensuring all food production workers adhere to quality standards set by the Executive Chef. This role operates within Seneca Gaming Corporation’s policies and procedures.
Responsibilities
- Establish production levels based on house counts or business forecast, previous experiences, and dates; post the menu forecast for all kitchen employees.
- Supervise kitchen preparation for service of all stations.
- Verify that all portion sizes, quality standards, department rules, policies, and procedures are maintained by kitchen employees.
- Supervise the production of all food items.
- Maintain a current understanding of all policy and guidelines regarding information security, including the Seneca Gaming Corporation Acceptable Use Policy.
- Provide exceptional customer service and communicate in a pleasant, friendly, and professional manner.
- Maintain a professional work environment with supervisors, managers, and staff.
- Meet attendance guidelines and adhere to regulatory, departmental, and company policies.
- Complete all required SGC Training programs within nine (9) months from commencement of employment.
- Attend all necessary meetings.
- Perform other duties as assigned, understanding that hours are determined by a 24-hour schedule.
Requirements
- Must be 18 years of age or older.
- A minimum of three (3) years in a food preparation position.
- Previous customer service experience preferred.
- Computer knowledge is a plus.
- Must possess good communication skills, including the ability to read, write, and speak effectively to employees and customers.
- Ability to understand and comply with policies and procedures, daily memos, chemical labels, and other instructions.
- Must be able to stand, walk, and move freely for extended periods.
- Work involves moderate exposure to unusual elements such as extreme temperatures, dirt, dust, fumes, smoke, and/or loud noises.
- Moderate physical activity is required, including handling objects up to fifty (50) pounds.
- Work environment involves some exposure to physical risk, requiring adherence to basic safety precautions.
- Must be able to work in an environment where smoking is permitted.
