About the Role
Administers, directs, and controls the effective and efficient operation of the assigned F&B outlet, performing all duties within the guidelines of Seneca Gaming Corporation’s policies and procedures.
Responsibilities
- Implement and maintain upscale standards upon approval.
- Train all restaurant staff on job duties and departmental standards, monitoring performance to ensure consistent or exceeding standards.
- Evaluate, provide feedback, and direct Shift Managers and all restaurant staff.
- Ensure all products served meet established specifications and standards.
- Manage a budget to ensure efficient operation and achieve fiscal and performance goals, recommending changes to enhance profitability.
- Maintain a rotation of weekly and seasonal special offerings based on industry trends, creativity, and guest feedback.
- Keep informed of new or revised restaurant/bar/dining concepts for F&B offerings, in sync with overall property plans.
- Provide disciplinary action when needed.
- Facilitate weekly management meetings with the department and attend property management meetings.
- Maintain constant control of the restaurant, including greeting and seating guests, proactively resolving service failures, handling guest complaints, responding to employee complaints, and addressing other encountered problems.
- Report any incidents to appropriate management.
- Assure prompt, professional service to all guests.
- Approach tables and speak with guests to obtain feedback about their dining experience.
- Handle administrative duties such as scheduling, payroll, filing, personnel maintenance, and HR issues.
- Advise the Director of Food & Beverage of daily concerns and needs, utilizing all available resources to maximize profits.
- Complete daily reports, including the Daily Manager Report and any Incident Reports.
- Prepare necessary paperwork and order supplies and equipment for an efficient, customer-oriented operation.
- Communicate regularly with associates, keeping them informed of all Casino activities and events.
- Ensure staff behavior and appearance are in full compliance with established standards.
- Share accountability for achieving cost goals, labor, and expenses.
- Evaluate staff performance on a ninety (90) day and annual basis.
- Maintain a current understanding of all policy and guidelines regarding information security, including the Seneca Gaming Corporation Acceptable Use Policy, and comply with all information security policies and procedures.
- Provide exceptional customer service to all patrons and communicate in a pleasant, friendly, and professional manner at all times.
- Maintain a professional work environment with supervisors, managers, and staff.
- Meet attendance guidelines and adhere to regulatory, departmental, and company policies.
- Complete all required SGC Training programs within nine (9) months from commencement of employment.
- Attend all necessary meetings.
- Duties, responsibilities, requirements, and expectations are subject to change as needed.
- Hours are determined by a 24-hour schedule.
Requirements
- Must demonstrate leadership, fairness, and sensibility to customers and employees.
- Must possess the ability to instill a sense of pride and personal responsibility in subordinates.
- Must be 18 years of age or older upon employment.
- Minimum six (6) years in the field of food and beverage.
- Minimum three (3) years food and beverage supervisory experience in a high-volume restaurant required.
- Minimum one (1) year experience as a general manager of a dining restaurant.
- Must be able to understand budget and hold responsible units accountable to meet budget.
- Must have a complete understanding of labor and productivity standards measured by covers per hour.
- Must be able to evaluate statistical reports and other business reports.
- Requires financial and management experience using computer, calculator, and/or adding machines.
- Ability to make decisions and direct others.
- Ability to interact with customers in a pleasant and friendly manner.
- Ability to resolve guest recovery situations.
- Must be able to stand, walk, and move through all areas of the casino/hotel.
- Maintain physical stamina and proper mental attitude to work under pressure in a fast-paced casino environment and effectively deal with customers, management, employees, and members of the business community in all situations.
- Must be able to work in an environment where smoking is permitted.
