About the Role

Under the direction of the Executive Chef, professionally manage the 360 Restaurant Kitchen (450 seats) and all unionized employees. Provide leadership, strategic direction, and recommendations for continuous improvement and profitability of kitchen operations. Foster a culture centered on the experience and enjoyment of food and wine, collaborating with the Restaurant Services team for cohesive strategy. Directly manage Sous Chef(s) and Sr. Sous Chef(s). Develop business plans to meet guest expectations and enhance restaurant reputation. Research and source unique food products, monitor daily inventories, and assist with ordering. Ensure Health and Safety programs are implemented and enforced.

Responsibilities

  • Manage the 360 Restaurant Kitchen (450 seats) up to 1000 covers per day.
  • Ensure company standards for food preparation and presentation are maintained and improved.
  • Set daily, weekly, and yearly tasks and objectives for Sous Chefs and Sr. Sous Chefs.
  • Ensure Sous Chef(s) and Sr. Sous Chef(s) properly execute day-to-day operations in all food service areas.
  • Ensure Sous Chefs and Sr. Sous Chef(s) maintain food quality, preparation, and service standards daily with a hands-on approach.
  • Collaborate with the Executive Chef to ensure training and coaching of all employees on HACCP, food service health and safety programs, and completing audits.
  • Ensure cleanliness and hygiene in kitchen areas, including refrigerators and storerooms, and proper rotation of food products.
  • Work with the Restaurant Services team to ensure a cohesive team strategy.
  • Input work requests for required equipment repair or service.

Requirements

  • Five (5) to seven (7) years of related experience, including managerial/leadership in high-volume, quality establishments.
  • Demonstrated supervision and management of employees (Senior Sous Chef, Sous Chef).
  • Comprehensive understanding and familiarity with kitchen procedures and processes.
  • Experience working within a unionized environment is an asset.
  • Red Seal Endorsement (RSE) is an asset.
  • Bilingualism (English/French) is an asset.
  • Ability to stand or walk for long periods.
  • Ability to work in a physical capacity requiring extended periods of standing, moderate lifting, pushing, pulling, bending, and reaching.
  • Ability to lift or move up to 25 kilograms.
  • Flexibility to work rotating shifts, including evenings, weekends, holidays, and overtime.
