About the Role

Lead a talented team and grow Above 319 as one of Sydney's premier rooftop venues. Thrive in fast-paced hospitality, create exceptional guest experiences, and lead from the front.

Responsibilities

• Lead, mentor, and develop a high-performing bar team through positive coaching and hands-on leadership.
• Deliver exceptional guest experiences by setting the standard for service every shift.
• Design, cost, and launch innovative cocktail menus, seasonal specials, and signature drinks.
• Develop creative beverage experiences including tastings, cocktail masterclasses, guest bartender takeovers, and special events.
• Build strong relationships with suppliers and brand partners while identifying opportunities for exclusive products and activations.
• Manage stock ordering, inventory, cellar operations, and regular stocktakes to maximize profitability and minimize waste.
• Prepare staff rosters and manage labor costs in line with operational budgets.
• Monitor beverage costs, sales performance, and financial targets while identifying opportunities to improve revenue.
• Ensure compliance with RSA requirements, liquor licensing legislation, food safety standards, and company policies.
• Oversee daily opening and closing procedures, cash handling, POS systems, and operational standards.
• Maintain a safe, clean, and welcoming environment for both guests and team members.

Requirements

• Previous experience managing bars or hospitality operations in a busy, high-volume venue.
• Strong commercial awareness, including stock control, labor management, budgeting, and cost control.
• Confidence managing supplier relationships and negotiating product opportunities.
• Flexibility to work evenings, weekends, and public holidays when the venue is at its busiest.
• A current Responsible Service of Alcohol (RSA) certificate.
• Full, unrestricted Australian working rights (essential).
