About the Role
The Cook is primarily responsible for preparing, seasoning, and cooking soups, meats, vegetables, desserts, or other assigned menu items. This role requires demonstrated knowledge and experience in all aspects of culinary arts and food service to meet high standards and assist the kitchen in daily production.
Responsibilities
- Prepare, season, and cook soups, meats, vegetables, desserts, or other assigned menu items.
- Meet high expectations of Rich's standards and assist the kitchen in daily production.
- Demonstrate knowledge and experience in all aspects of culinary arts and food service.
- Experience with a la carte, banquet and large volume cooking, meat temperatures, production of all sauces and compounds, and cooking food in appropriate manners such as poaching, sautéing.
- Create a consistent finished product and high-quality presentation.
- Learn menus and recipes, read recipes, visualize the finished product, and accept responsibility for accuracy.
- Read multiple contracts simultaneously and effectively prep them.
- Prepare prep lists.
- Ensure food safety, including proper food storage and holding temperatures.
- Maintain a clean and sanitary work area, including countertops, utensils, equipment, and refrigeration.
- Adhere to state, county, and health and work safety regulations.
- If functioning in a lead capacity: take responsibility for assigned employees in the absence of the Executive Sous Chef or Sous Chef.
- If functioning in a lead capacity: effectively communicate and delegate work and ensure proper execution, including equipment training.
- Maintain working knowledge of food costs, inventory control systems, and purchasing.
- Be flexible with schedule, including being on notice to change locations.
- Maintain a front-of-the-house presence when overseeing a station, including carving in front of guests.
Requirements
- Minimum 3 months experience as line cook.
- Minimum 3 months experience as pantry/prep cook.
- Must be able to lift 50 pounds.
- Able to stand for extended periods of time.
- Visual acuity.
