About the Role
Dandelion Chocolate is seeking an Apprentice Chocolate Maker to join their production team in San Francisco's Mission District. This role involves learning and performing all steps of the chocolate-making process, from bean sorting to bar wrapping, contributing to daily production goals, and maintaining quality standards. The position offers a unique opportunity to be part of a growing factory focused on crafting high-quality, single-origin chocolate.
Responsibilities
- Learn and perform all steps of chocolate making: sorting cocoa beans, roasting, winnowing, starting batches, refining and conching, tempering, grinding, foiling, wrapping, and labeling bars.
- Contribute towards daily goals for sorting cocoa beans, roasting, tempering bars, and completing conches.
- Describe factory processes, procedures, and chocolate-making methods to others.
- Taste and evaluate chocolate bars for flavor and quality, identifying deviations from standard.
- Blindly identify the country of origin for at least seven different chocolate bars.
- Actively participate in Continuing Chocolate Education classes.
- Clean and maintain the production facility and machinery.
- Assist with tasks such as washing bar molds and bins, and sweeping floors.
- Operate all chocolate machines safely and follow machine SOPs.
- Work with the team to achieve daily production goals.
- Maintain a positive attitude, even when facing challenges.
- Be a welcoming presence to tour groups, filming crews, and guests while being mindful of safety.
- Stay curious, ask questions, help with projects, and see tasks through to completion.
Requirements
- Weekend availability required, with shifts from 7:30 am to 4:00 pm, including one weekend day (Saturday or Sunday).
- Maintain a positive outlook, even with shifting priorities or equipment issues.
- Prior experience in a commercial kitchen or production facility is preferred.
- Comfortable working with machinery.
- Willingness to adapt to changing processes.
- Ability to work independently and as part of a team.
- Comfortable with repetitive tasks.
- Ability to stand for most of the day, bend, squat, and use hands for fine and gross motor skills.
- Ability to occasionally lift objects up to 50 pounds.
