About the Role
Dandelion Chocolate is seeking a Lead Chocolate Maker to join their production team in San Francisco. This role is core to the success of the daily Chocolate Production operations, focusing on crafting small batches of high-quality chocolate.
Responsibilities
- Perform all steps of chocolate production: inspecting beans, roasting, cracking, winnowing, starting batches, tempering, and foiling bars to lead chocolate maker metrics.
- Own at least one area of the chocolate production process and serve as the go-to person for questions and issues.
- Undertake production projects, such as collaborating with the flavor manager to develop profiles for origins.
- Illustrate professionalism, timeliness, consideration, and awareness of surroundings.
- Lead the team to meet or exceed all daily goals, troubleshooting immediate issues and appropriately raising concerns to the Production Manager with proposed solutions.
- Delegate tasks to team members efficiently.
- Participate in the Production Task Force (PTF) meetings to discuss process questions or difficulties.
- Continuously evolve skills and expertise through professional development, including researching new tools, passion projects, collaborating with other departments, and attending conferences.
- Taste and evaluate chocolate bars for flavor and quality, holding high standards and monitoring each batch.
- Adhere to all safety standards and uphold proper machinery, food safety, and quality procedures.
- Be a welcoming presence at the factory for guests, mindful of safety and daily production goals.
- Stay curious, ask questions, and be willing to help and see projects through.
Requirements
- Availability to work from 7:30 am to 4:00 pm, including weekends.
- Previous experience and a developed chocolate palate as a chocolate maker in a commercial chocolate production environment.
- Experience in roasting, tempering, melanging, and refining artisan chocolate.
- Ability to absorb and communicate new information in a fast-paced environment.
- Ability to complete tasks quickly, accurately, and efficiently.
- Ability to complete the Lead plan within 30 days.
- Ability to perform tasks requiring bending, stooping, and walking throughout the shift.
- Ability to work under pressure.
- Ability to navigate crowded spaces and respond to guest and team needs efficiently and courteously.
- Ability to be on feet for most of the day.
- Ability to occasionally lift up to 50-pound objects.
