About the Role
Sage Hospitality Group is hiring a Banquet Cook at Hotel Van Zandt in Austin, Texas, to ensure proper service through quality control and sanitation.
Responsibilities
- Check all items against recipe cards, verify use records, and ensure efficient, quality food presentation.
- Monitor line setup for maximum efficiency during meal functions.
- Ensure adherence to equipment maintenance and kitchen cleanliness policies.
- Prepare food of consistent quality following recipe cards, production, and portion standards.
- Prepare food items ahead of time, avoiding overproduction based on estimated needs.
- Date all food containers, rotate stock, and maintain proper temperatures for perishables.
- Check pars for shift use, determine necessary preparation, freezer pulls, and line setup.
- Note any out-of-stock items or potential shortages.
- Assist in keeping the buffet stocked.
- Return unused food items to designated storage areas, ensuring proper covering and dating of perishables.
- Assist in developing plans to address food cost issues, controlling waste, loss, and usage.
- Prepare food of consistent quality following recipe cards and production and portion standards, per dupe from servers.
- Start food items that are prepared ahead of time, making sure not to prepare more than estimated needs.
- Date all food containers and rotate as per the SOP, making sure that all perishables are kept at proper temperatures.
- Check pars for shift use, determine necessary preparation, freezer pull and line set up.
- Note any out-of-stock items or possible shortages.
- Assist in keeping buffet stocked.
- Return all food items not used on next shift to designed storage areas, being sure to cover/date all perishables.
- Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per SOP.
Requirements
- High school education or equivalent.
- One to two full years of experience in a related position.
- Ability to work as a team member.
- Ability to communicate with kitchen staff.
- Knowledge of cooking practices and procedures.
- Ability to perform non-repetitive analytical work.
- Regularly lift, push, pull, and carry food cases and metros weighing up to 70 lbs.
- Periodic climbing required.
- Bend knees when using the lower oven for cooking.
- Full range of mobility and ability to travel 30-50 feet regularly.
- Continuous standing during preparation, service, or expediting.
- Moderate hearing to hear equipment timers and communicate with staff.
- Excellent vision to ensure appropriate product preparation.
- Moderate comprehension and literacy to read use records and special requests.
