About the Role
Reporting to the Head Chef, the Kitchen Sous Chef will play a key role in leading daily kitchen operations, supporting and developing the brigade, and ensuring every dish leaving the pass meets quality, presentation, and consistency standards. This is a hands-on leadership role suited to a motivated culinary professional who thrives under pressure, enjoys mentoring others, and is passionate about delivering outstanding food and service.
Responsibilities
- Supporting the Head Chef in the day-to-day operation of the kitchen
- Leading and motivating the kitchen team during service
- Ensuring food quality, presentation and consistency standards are maintained at all times
- Managing service execution to ensure efficient and timely meal delivery
- Training, mentoring and developing junior chefs and kitchen staff
- Assisting with rostering, stock control, ordering and inventory management
- Monitoring food and labour costs while minimising waste
- Maintaining high standards of food safety, hygiene and HACCP compliance
- Creating a positive, collaborative and high-performing kitchen culture
- Ensuring all kitchen equipment is maintained and operating efficiently
Requirements
- Previous experience as a Sous Chef or Senior Chef de Partie within a high-volume restaurant environment
- Relevant commercial cookery qualifications
- Strong leadership skills with the ability to coach and develop team members
- Experience managing kitchen operations, stock control and food costs
- Sound understanding of food safety regulations and HACCP principles
- Excellent organisational and time-management skills
- Strong communication and problem-solving abilities
- A hands-on approach with a strong work ethic and attention to detail
- The ability to thrive in a fast-paced service environment
- Flexibility to work across evenings, weekends and public holidays
