About the Role
At Soho House, the Chef de Cuisine assists the Executive Chef in managing the Kitchen Department, requiring culinary, leadership, and human resource skills. The role ensures maximum efficiency and adherence to Soho House standards, ideal for individuals passionate about food and natural leadership.
Responsibilities
- Oversee back of house (BOH) operations, staffing, and food production, accommodating special requests, dietary restrictions, and allergy procedures.
- Maintain Health and Safety standards according to Soho House, local, and regional government regulations.
- Establish professional relationships and provide educational opportunities for team development.
- Lead "Cook House" education, training demos, trips, and on-the-job staff development.
- Influence processes for an efficient kitchen while maintaining high food quality and controls.
- Purchase and produce top-quality food, create seasonal menus, maintain recipes, and update signage.
- Manage staff schedules, payroll, kitchen setup/breakdown, production, prep, and uniform standards.
- Instill teamwork and synergy between front and back of house staff through communication and task delegation.
- Partner with the Executive Chef to develop event menus, food preparation, and manage food costs.
- Share responsibility for proper storing procedures, food orders, food cost, equipment, sanitation, and hygiene.
- Report and follow up on maintenance issues and ensure kitchen equipment is in good working condition.
- Curate and maintain distributor and purveyor relationships, reviewing agreements and devising cost reductions.
- Perform other duties as assigned by supervisor/manager.
Requirements
- Minimum of 4-5+ years' experience in a similar volume-based business representing global culture and consistent, approachable, and elevated dishes.
- Culinary trained and professional with a passion for development.
- Experienced in training and leading teams, and in large-quantity food production.
- Excellent knowledge of quality food operations.
- Experienced in managing P&L's, labor, purchasing, vendors, and quality control.
- Must possess consistent and stable work experience and a desire to operationally support the business.
- Must possess Food Serve Safe certification and experience with local sanitation regulations.
- Well-versed in timely email etiquette and written/verbal communication.
- High school diploma or equivalent trade school certification.
- Must be able to seize, grasp, turn, and hold objects with hands.
- Must be able to work on feet for at least 8-10 hours.
- Must be able to perform fast-paced movements within the kitchen and storage areas.
- Must be able to move, pull, carry, or lift up to 50 pounds on occasion and 35 pounds regularly.
- Occasional environmental exposures to cold, heat, and water.
- Occasionally kneel, bend, crouch, and climb as required.
