About the Role
We are seeking an experienced, creative, and highly skilled Sushi Chef de Cuisine to lead the sushi culinary experience at Janu Tokyo. This role is for a passionate professional who thrives in a refined luxury environment, bringing exceptional craftsmanship and a deep respect for Japanese tradition and guest experience. You will craft dishes reflecting Janu’s vibrant spirit, deliver memorable dining moments through precision and creativity, mentor team members, and contribute to an authentic, innovative, and hospitable dining experience.
Responsibilities
- Prepare and present high-quality sushi and Japanese dishes in accordance with Janu standards.
- Ensure consistency, quality, and artistic presentation across all sushi offerings.
- Select, handle, and manage premium seafood and seasonal ingredients with expert knowledge and care.
- Maintain high food safety, hygiene, and sanitation standards in compliance with local regulations.
- Collaborate with kitchen leadership to develop seasonal menus and innovative sushi concepts.
- Train, mentor, and develop junior chefs and kitchen team members.
- Monitor ingredient quality, freshness, and inventory levels to support operational efficiency.
- Work closely with front-of-house teams to deliver seamless and personalized guest experiences.
- Uphold luxury hospitality standards through professionalism, precision, and teamwork.
- Contribute to a positive kitchen culture focused on excellence, creativity, and continuous improvement.
Requirements
- Minimum 15 years of practical experience as a Sushi Chef or Senior Sushi Chef.
- Experience working in luxury hotels, high-end restaurants, or similar service environments.
- Strong knowledge of traditional and modern sushi techniques, knife skills, and seafood preparation.
- Deep understanding of Japanese culture, seasonality, and ingredient sourcing.
- Proven ability to maintain high standards under pressure in a fast-paced environment.
- Excellent leadership and communication skills.
- Advanced business-level Japanese proficiency (CEFR C1 or higher).
