About the Role
Responsible for crafting and serving innovative cocktails, providing memorable experiences for guests. As a Lead, you will support the Director of Business Development with supervising the daily operations of the bar.
Responsibilities

- Maintain highest possible levels of employee morale and bar productivity, all while maintaining HAP.
- Responsible for initiating training program for all new bartenders and train staff on new specialty drinks.
- When requested, assist Director of Business Development to properly document Personnel/Payroll transactions, as directed, for processing in the accounting department.
- Ensure all employees are relieved of duties during rest and meal breaks.
- Work with Director of Business Development to ensure consistent communication with the team via regularly scheduled staff meetings to include safety tailgates and beverage training.
- Create monthly schedule, accommodating time off requests as much as possible.
- Collaborate with the management team to develop promotions and special events to drive sales and enhance the guest experience.
- Ensure team is aware of upcoming events and company updates.
- Communicate any employee concerns directly with HR and the Director of Business Development.
- Responsible for maintaining the safety & sanitation of bar.
- Follow all specified procedures to correctly handle cash, including signing paid-out sheet for tips received, maintaining adequate cash amount in bank, giving correct change for cash transactions, ringing all drinks through the POS system, and accurately processing credit cards.
- Assist with monthly liquor inventory program.
- Maintain the organization of the bar areas at all time, including emptying trash as needed.
- With the support of the bar team, create a unique cocktail menu, change based on seasonality relationships with spirit brands and cost to maintain standards of an upscale bar.
- With the support of the Director of Business Development, regularly review all beverage pricing to ensure profitability.
- Receive liquor orders, checking to see if orders are correct.
- Submit weekly petty cash requests, weekly sales reports, and approved invoices to accounting.
- Weekly bank trips to cash petty cash checks.
- Host private and sponsored events—creating special menus for each event.
- Hosting cocktail classes.
- Understand and respond to all guest needs and requests in a timely and professional manner, deferring to the Director of Business Development, when necessary, to ensure customer satisfaction.
- Extend a courteous, friendly and professional greeting to guests as they arrive, and to thank them as they depart.
- Provide properly mixed cocktails and other beverages, as requested, to our guests.
- Follow all specified procedures to properly open and close the bar, including handling bar keys, reports and performing all necessary side work.
- Maintain adequate stock of beverages, supplies and clean glassware in accordance with established pars and routine procedures, and be responsible for the security of beverage stock while on duty.
- Review and verify previous shift’s inventory, at the beginning of every shift.
- Understand or be willing to learn about classic & modern cocktails, spirits, house cocktails, produce, etc.
- Abide by state liquor service standards, particularly those prohibiting service to minors and intoxicated persons.
- Represent and market the Wildhawk in a positive and professional manner as requested and continually promote the Wildhawk bar internally and externally by attending special events when requested and building relationships both on and off property.
- Promote and comply with all company policies and procedures.
- Immediately report all suspicious occurrences and hazardous conditions and avoid injury to self and others.
- Maintain the cleanliness and safety of work areas at all times.
- Attend all mandatory meetings as directed.
- Perform other tasks, including cross-training, as directed.
- Check ID’s when no Security Guard on duty.
- Be able to perform all positions and fill in if/when necessary.
- Adhere to the attendance and punctuality policy as outlined in the PlumpJack Employee Handbook.
- Report to work as scheduled and be prepared to start work.
- Remain at work for the entire work shift, except for meal and rest periods or when required to leave on authorized PlumpJack business.
Requirements
- Minimum 1-2-years’ experience in a similar role.
- Must have current Food Handler Certificate and Responsible Beverage Service Certificate that reviews all California liquor laws.
- Current CPR certification preferred.
- Must be flexible, work efficiently under pressure and able to work in a noisy fast-paced bar environment.
- Detail oriented, organized, and efficient.
- Diplomatic and calm with strong verbal communication skills.
- Must be able to communicate with co-workers and guests in a courteous, friendly, and professional manner.
