About the Role

CHG is seeking a Sous Chef to join their team, focusing on creating unforgettable culinary experiences. This role is crucial in driving the kitchen's success and ensuring exceptional dishes that leave clients and guests satisfied. The position typically operates on a Monday-Friday schedule with a 40-hour contract and includes a closure during Christmas.

Responsibilities

  • Ensure prompt service of all meals and services to company standards and delegate satisfaction.
  • Prepare and present food for the restaurant under the Head Chef's instruction.
  • Assist the Head Chef with menu planning and costing.
  • Ensure food preparation and presentation methods comply with catering standards.
  • Prepare and assist at special functions, potentially outside normal working hours.
  • Assist the Head Chef in managing the back-of-house food service team, including training and development.
  • Conduct weekly team meetings in the Head Chef's absence to discuss operations and staffing.
  • Manage team performance issues and take appropriate action in consultation with the General Manager.
  • Prepare weekly staff rotas and complete timesheets.
  • Ensure high standards of appearance within the catering department.
  • Order necessary food and beverages for the department's smooth operation.
  • Liaise with the facilities supervisor to order disposable and cleaning items.
  • Ensure waiting staff are familiar with daily menus and conduct pre-service debriefs, monitoring portion control.
  • Respond promptly to client requests and comments, reporting them to Senior Management.
  • Serve on hot counters to meet catering standards, booking schedules, and client requirements.
  • Liaise with the events team to determine forthcoming events, numbers, and specific catering requirements.
  • Conduct daily quality and standards checks in the catering area.
  • Maintain presence in restaurant areas to ensure catering standards and client requirements are met.
  • Ensure a high level of service from the food service team at all times.
  • Understand the venue budget, forecast, and business plans, providing input for the catering department.
  • Work with the Head Chef to manage food and beverage expenses within budget.
  • Administer invoices and input information onto the food & non-food purchase record sheet in the Head Chef's absence.
  • Implement effective stock rotation and reconciliation within the department.
  • Maintain adequate stock levels to support departmental and venue needs.
  • Provide monthly stock and purchasing information to the General Manager in the Head Chef's absence.
  • Control the staff budget for temporary staff and ensure overtime pre-authorization in the Head Chef's absence.

Requirements

  • Must currently reside in the UK.
  • Must be able to work in the UK without sponsorship.
  • Experience managing and developing kitchen teams.
  • Ability to carry out reasonable management requests, including duty management shifts.
  • Ability to build good working relationships with all other areas of the venue team.
  • Willingness to support the venue team, including assisting with client events outside normal hours and weekends.
  • Attend company events/training as requested by senior management.
