About the Role
Adina Sydney Darling Harbour is reopening following a full refurbishment and is seeking a Food & Beverage Manager to spearhead the pre-opening build of Shoreline Kitchen, shaping culture, assembling a team, and setting the standard from day one. This role offers full operational and commercial ownership of the all-day dining concept, requiring a hands-on, guest-facing leader.
Responsibilities
- Lead from the floor with a hands-on style, setting an example for the team in presentation and service quality.
- Drive commercial performance by setting financial forecasts and budgets, reviewing revenue and expenses, managing food costs, and completing stock takes and wastage reports.
- Ensure operational efficiency and consistency through effective rostering, coverage management, and seasonal activity planning.
- Develop and implement promotions, strategies, and special events in collaboration with Sales & Marketing to drive footfall and growth.
- Mentor and inspire the team, fostering a culture of excellence, inclusivity, and warmth.
Requirements
- Proven senior F&B leadership experience in hotels or similar fast-paced venues.
- A track record of building and leading high-performing teams.
- Strong financial acumen, commercial savvy, and experience managing food costs and budgets.
- Previous experience with food and beverage pairing and menu engineering.
- Experience in pre-openings or similar F&B operations.
- A genuine passion for people, service, and creating memorable guest experiences.
- A warm, grounded leadership character.
- Established and trusted relationships with suppliers and relevant stakeholders.
- Experience working within CBD environments.
- Strong familiarity with Sydney (desirable).
