About the Role
Manages daily kitchen activities, oversees staff, assists with menu preparation, ensures food quality and freshness, and monitors ordering and stocking. Ensures meal quality and consistency by adhering to designated recipes.
Responsibilities
- Lead kitchen team in the Executive Chef's absence.
- Provide guidance to junior kitchen staff, including line cooking, food preparation, and dish plating.
- Oversee and organize kitchen stock and ingredients.
- Ensure a first-in, first-out food rotation system and verify proper dating and organization of food products for quality assurance.
- Keep cooking stations stocked, especially before and during prime operation hours.
- Hire and train new kitchen employees to restaurant and kitchen standards.
- Manage food and product ordering, maintain detailed records, minimize waste, and improve waste reduction and budgetary concerns.
- Supervise all food preparation and presentation to ensure quality and restaurant standards.
- Collaborate with the Executive Chef to maintain kitchen organization, staff ability, and training opportunities.
- Verify that food storage units meet standards and are consistently well-managed.
- Assist the head chef with menu creation.
- Coordinate with the restaurant management team on supply ordering, budget, kitchen efficiency, and staffing.
- Ensure efficient operation of assigned food production areas.
- Analyze cost and quality of food production, manage within budget, and adhere to time management.
- Train staff on safe work habits and ensure immediate reporting of unsafe conditions.
- Implement and maintain all company standards, establishing training methods for staff.
- Produce and maintain the highest food quality and controls for all food products served.
- Assure the highest health, sanitation, and safety standards in food handling and overall cleanliness.
- Guarantee adherence to menus, recipes, methods, pictures, and specifications provided by the Executive Chef.
- Check all food outlets and displays for creativity, quality, cleanliness, and food safety.
- Assure timely setup and schedule well-trained cooks in proper uniform.
- Ensure teamwork and proper communication with front-of-house staff.
- Accommodate guest and member requests when possible.
- Work regularly with the Events department on menus, food preparation, food costs, and ensure quality food service and product delivery.
- Delegate daily tasks to staff to ensure smooth operation and service.
- Share overall responsibility for proper storing procedures, food orders, food cost, equipment, sanitation, and hygiene to Company and NYS standards with the Executive Chef.
- Perform staff scheduling, payroll, and other administrative tasks as required.
- Perform other duties as assigned by supervisor/manager.
Requirements
- Strong knowledge of NYS sanitation regulations.
- Possess a good work history and stability.
Skills
- Ability to work independently with minimum supervision.
- Effective written and verbal communication skills.
- Excellent cooking skills.
- Experience in training subordinates in large quantity food preparation.
- Excellent knowledge of quality food operations.
- Ability to taste all foods to assure correct preparation.
- Product cost and quality conscious.
Experience Level
- 3+ years experience in a related position
Education Level
- High school diploma or equivalent
