About the Role

Contigo Catering is seeking a Pastry Sous Chef to assist the Executive Chef in planning, organizing, and leading the pastry department. This role involves creating unique and excellent meals, managing inventory, and contributing to menu development while upholding company goals for cost, quality, and sanitation. The ideal candidate is creative, organized, proactive, and a team player with a passion for food and hospitality.

Responsibilities

  • Support the Executive Chef in executing and developing pastry menu vision.
  • Maintain intimate knowledge of ingredients and execution of all pastry menu items.
  • Manage personal organization to ensure smooth kitchen operations.
  • Lead by example in maintaining excellence, timeliness, proper equipment use, technique, cleanliness, and safety standards.
  • Manage the kitchen in the absence of the Executive Chef and other Sous Chefs.
  • Meet with Executive Chef bi-weekly with menu ideas, operational updates, and maintenance needs.
  • Update weekly log as needed.
  • Be aware of inventory for all pastry-related food products and kitchen equipment.
  • Study BEOs and create weekly orders for submission to the Executive Chef.
  • Manage and organize all pastry leftovers.
  • Maintain accurate knowledge of costs and pricing, updating software and client prices.
  • Communicate with the Executive Chef and Sales Team regarding inventory.
  • Update inventory spreadsheet daily with current pricing and new invoices.
  • Prepare and plate pastries for client tastings.
  • Perform necessary prep for upcoming events.
  • Create Prep Sheets for upcoming events.
  • Assist with developing unique menus for events.
  • Lead events when time allows or on heavy event weekends.
  • Assist in developing the Contigo Catering pastry menu through research and experimentation.
  • Create new menu items for approaching seasons and holidays.
  • Test recipes for taste, presentation, holding, reheating, travel, and freezing.
  • Maintain a recipe database.
  • Participate in menu planning and brainstorming meetings.

Requirements

  • 3+ years of pastry experience.
  • 5+ years of professional cooking experience.
  • Restaurant experience required.
  • Exceptional organization, communication, and interpersonal skills.
  • Ability to keep multiple projects in mind and ensure key messages cascade across the team and client base.
  • Proficient computing skills including Google Drive and Microsoft Office.
  • Passion for good food and drink, events that inspire, and Texas style hospitality.
  • Ability to integrate into the culture of Contigo Catering.
  • Ability to work a flexible schedule, including evenings, holidays, and weekends.
  • Ability to safely lift up to 50 lbs.
  • Ability to engage in medium work, including being on feet for a full shift.
  • Ability to type and operate necessary equipment.
  • Ability to withstand exposure to varying conditions of noise, sound, temperature, and environmental conditions.
  • Ability to walk amidst varying terrains and perform on-site event duties.
  • Reliable transportation is required.
