BHG is developing and operating special places for gastronomy and hospitality in Berlin. The company includes renowned restaurants such as Luna D’Oro and Restaurant Veronika. The new concept focuses on French cuisine, brasserie-style, and initially opens in the evening. In the future, the service offering will be gradually expanded to include lunch and breakfast. Responsibilities
- Support the Chef de Cuisine in developing and implementing a high-quality, seasonal, sustainable, and creative menu concept.
- Ensure smooth and efficient kitchen operations, considering guest and employee satisfaction.
- Lead, train, and develop the kitchen team, fostering talent within the kitchen.
- Control adherence to recipes, portion sizes, and standardized preparation methods.
- Coordinate and oversee training for kitchen and back-of-house staff.
- Actively participate during peak service times in the kitchen and preparation areas.
- Support the planning and organization of culinary teams in close collaboration with the Chef de Cuisine and General Manager.
- Implement and monitor all HACCP, health, and safety standards.
- Develop and implement operational standards and SOPs for continuous improvement of service, processes, and guest experience.
Requirements
- At least 4 years of professional experience in a comparable position with responsibility for concept-oriented kitchens.
- In-depth experience in à la carte service.
- Experience in leading and organizing internal teams in high-quality gastronomy or cultural institutions.
- Strong leadership, organizational, and communication skills.
- High quality awareness and a structured, solution-oriented approach to work.
- Very good knowledge of hygiene, HACCP, and health and safety regulations.
- Passion for high-quality, sustainable, and creative cuisine.
- Willingness to actively shape and further develop operational processes, guidelines, and systems.
- Team-oriented personality with a hands-on mentality.
- Fluent German and English language skills.
